Homemade Pizza Dough January 12, 2011

The following pizza dough recipe was included with the pizza stone the kids bought their dad for Father’s Day. I have made it many times per the recipe but tonight I “tweaked” it by using the KitchenAid with the hook attachment and it worked out beautifully; I saved about 5 minutes of kneading time. My “tweaks” are in italics.

Makes approximately two 8″ x 12″ pizzas
Ingredients
2 teaspoons dried yeast
1/2 teaspoon salt
2 1/2 cups plain flour
1 cup warm water
1 tablespoon olive oil

Stand Mixer Directions
1. Combine yeast, salt and sifted flour in large bowl (mixing bowl)
2. (Turn on mixer and) Gradually stir in water and oil until wet and dry ingredients are combined
3. Turn the dough onto floured surface; knead about 10 minutes or until smooth and elastic (knead with KitchenAid hook attachment for about 3 minutes or until the dough is smooth and elastic)
4. Place dough in large greased bowl and cover with damp towel. Place in warm place until dough has doubled in size, about 30 minutes (I put the bowl in a sink with warm water – about 1/3 way up the bowl and cover with towel)
5. Turn dough onto floured surface, knead until smooth
6. Divide dough into 2 parts
7. Mold pizza dough to required size and place on flat floured pizza stone (or favorite pizza pan)
8. Assemble the pizza with your favorite topping
9. Bake pizza to desired doneness

Food Processor Directions
I don’t have a stand mixer, so I tried using my food processor to make the dough and it worked great. Use the ingredients above and directions that follow:

1. Combine yeast, salt and sifted flour in food processor bowl by pulsing.
2. Turn on food processor and gradually add water and oil though tube until wet and dry ingredients are combined and cleans sides of bowl.
3. Process 1 minute
4. Place dough in large greased bowl and cover with damp towel. Place in warm place until dough has doubled in size, about 30 minutes (I put the bowl in a sink with warm water – about 1/3 way up the bowl and cover with towel)
5. Turn dough onto floured surface, knead until smooth
6. Divide dough into 2 parts
7. Mold pizza dough to required size and place on flat floured pizza stone (or favorite pizza pan)
8. Assemble the pizza with your favorite topping
9. Bake pizza to desired doneness
