We love this easy stir fry. For recipes like this that call for fresh ginger, I keep a whole fresh ginger root in a zip lock bag the freezer and cut off pieces as needed. It not spicy at all with 1/4 teaspoon of crushed red pepper so if you like it spicy add more.
4 cups vertically sliced sweet onion
2 cups broccoli florets
1 lb. pork cut into small pieces (tenderloin or stir-fry pork)
1/4 or more crushed red pepper
1 Tablespoon sugar
1 tablespoon minced fresh ginger
1/2 cup chicken broth
3 Tablespoons soy sauce
1/2 cup cashews or peanuts
Serve with rice.
Heat wok or skillet coated with cooking over medium high heat. Add onions and stir fry 8-10 minutes until lightly browned. Remove from wok and place in serving bowl. Re-coat wok and add broccoli. Sir fry 3 minutes. Add 1/4 cup water and steam until liquid evaporates. Remove broccoli from wok put in same bowl as onions. re-coat wok once again and add pork and red pepper. Stir fry until no longer pick and all liquid evaporated. Stir in sugar, ginger and garlic. Stir fry 30 seconds. Add onion and broccoli back into wok. Stir in chick broth, soy sauce and nuts. Cook 1 minute.
